    Make Your Sweet Potato Toast Slices

    To make your toasted sweet potato slices, simply wash a medium Sweet Potato, cut it into 4 slices lengthwise, and pop them in your toaster on the highest setting. You may have to put the slices in for a few cycles.

    No toaster? These slices can be toasted in the oven too. Just preheat your oven at 200℃/400℉, lay the slices out on a lined baking sheet, sprinkle with a little Sea Salt & Black Pepper and bake them for around 15 minutes.

    Store any left over slices in an airtight container or freezer bag, refrigerate, and pop them in the toaster, oven, or under the grill for a few minutes to reheat.


    Make the Topping

    Spread 1 tablespoon of Greek Yogurt on each slice of Sweet Potato. Layer on the Strawberries, then sprinkle each slice with half a tablespoon of Flaxseeds to serve.


    *Use a dairy-free alternative such as soy or coconut yogurt in place of Greek yogurt to make this recipe 100% plant-based.
