Peanut Butter, Banana & Chia Sweet Potato Toast

Make Your Sweet Potato Toast Slices

To make your toasted sweet potato slices, simply wash a medium Sweet Potato, cut it into 4 slices lengthwise, and pop them in your toaster on the highest setting. You may have to put the slices in for a few cycles.

No toaster? These slices can be toasted in the oven too. Just preheat your oven at 200℃/400℉, lay the slices out on a lined baking sheet, sprinkle with a little Sea Salt & Black Pepper and bake them for around 15 minutes.

Store any left over slices in an airtight container or freezer bag, refrigerate, and pop them in the toaster, oven, or under the grill for a few minutes to reheat.

Make the Topping

Spread 1½ tablespoons of smooth or crunchy Peanut Butter evenly over your slices of Sweet Potato, then top them with the Banana slices. To serve, sprinkle on ½ a tablespoon of Chia Seeds per slice.

*Always opt for natural peanut butter with no added sugar and salt. Alternatives such as almond, cashew or sunflower seed butter are also delicious options.
