Sheet Pan Cod & Mediterranean Vegetables
Preheat your oven to 180°c/Gas 4 then line a sheet pan with foil and place it to one side. Toss the Red Onion, Bell Pepper and Cherry/Grape Tomatoes in a tablespoon of Olive Oil and arrange them on the baking tray. Leave a space in the middle.
Place the Cod Fillet in the middle of the vegetables. Mix a tablespoon of Olive Oil with minced Garlic and Dried Mixed Italian Herbs, then rub it into the fish. Season the cod and vegetables with Sea Salt & Black Pepper and place the slices of Lemon on top, then place the sheet pan in the oven for 12-15 minutes, until the cod is cooked through. Optionally, serve with ½ cup of cooked brown rice (for 108 calories).
*If cod is not readily available where you are, feel free to use whichever fish you prefer.
