Sheet Pan Salmon & Green Vegetables
Preheat your oven to 180°c/Gas 4, then line a sheet pan with foil and set it to one side. Toss the Green Beans and Broccoli in a tablespoon of Olive Oil, then arrange them on the sheet pan. Leave a space in the middle. Pat the Salmon dry with a paper towel and place it in the middle of the sheet pan (skin side down if applicable).
Mix a tablespoon of Olive Oil, Dried Italian Mixed Herbs and minced Garlic together and spoon it over the Salmon. Season the fish and vegetables with Sea Salt & Black Pepper, place a Lemon slice on top of the fish fillet and then bake in the oven for 20 minutes, until the salmon is cooked through. Serve with an optional ½ cup of brown rice (108 calories).
